What makes SMC ice cream super-premium?
According to the International Dairy Foods Association
(IDFA), super-premium ice cream has a very low overrun and high fat content,
and the manufacturer uses the best quality ingredients.
Overrun is the amount of aeration the ice cream undergoes.
Aerating ice cream keeps the mixture from being an inedible frozen mass!
Federal standards require that the finished ice cream product cannot weigh less
than 4.5 pounds per gallon.
Super premium ice cream needs an overrun of less than 50%,
meaning that ice cream is made with one part air to every two parts cream.
Lower overrun makes the ice cream taste smoother, creamier, and richer! Less
air also means fewer ice crystals and more ice cream per container!
Super premium ice cream has to contain at least 14%
